It’s Ramadhan, It’s the middle of the week. And you just got back from work and feeling a little tired. You look at the clock and oh no! There’s 45 minutes left to Iftar (breaking fast) and you’re short of ideas on what to cook for the family (or yourself…). The day is hot and no one wants to go out to the bazaar.Yes, yes, we’re familiar with this situation too. But fret not. Here’s a lovely, quick recipe from MAGGI® that’ll solve your mid-week Iftar meal…
All you need is some chicken and some basic stuff that’s most likely in your fridge and pantry anyway. It’s not only fast, but in the spirit of Ramadhan, frugal too. Just cook some rice first!
Here’s what you need!
• 3 chicken drumsticks, skin off
• 1 tsp turmeric powder
• 1 tsp chilli powder
• 4 shallots, finely minced
• 4 red onions, finely minced
• 1 inch young ginger, sliced
• 4 – 6 red chilli, finely minced
• 2 tbsp MAGGI® Chilli Sauce
• 1 tbsp MAGGI® CukupRasa
• 1 tomato, cut into wedges
• About a cup of water
• Oil for frying
First of all, we need to pan fry the chicken. Pan-frying uses less oil so it’s both healthier and also less wasteful. Toss the chicken with the turmeric and chilli powder and marinade for about 10 minutes. Next heat up some oil (about 2 inches deep) and pan-fry the chicken for about 6 minutes until they’re halfway cooked (it should still be soft to touch).
Put the chicken aside and pour out most of oil from the pan, leaving about 5 tablespoons in. This oil is packed with flavour and will make this dish even tastier.
Now sauté the shallots, onions, ginger and chillies in the oil until it’s fragrant and caramelized, about 5 minutes. Here comes the gravy: dollop in MAGGI® Chilli Sauce, sprinkle in MAGGI® CukupRasa and tomatoes with about a cup of water.
Stir it around, bring it to a boil and then simmer for 10 minutes. Simmering allows better flavour extraction from the aromatic vegetables. It’ll smell incredible by now but hold on! Iftar isn’t too far ahead.
Put the chicken drumsticks back in the pan and simmer, stirring around. Let this cook for another 10 minutes until the sauce has reduced and thickened into a gorgeous, almost syrupy consistency. Turn off the heat and plate it up. All this in about half and hour!
Now wasn’t that easy? And the resulting recipe is great. The fried chicken will be juicy, soaked in the complex, sweet, sour and spicy flavours of the sauce. It’ll go excellent with hot white rice and some simple ulam- just the way we like it. Plus after a day of fasting it won’t make you feel so bloated.
